














Product Overview
HM-DAP is an automatic potentiometric titrator built for the precise determination of acid value and peroxide value in food. It applies cold-solvent automatic potentiometric titration to acid value and potentiometric titration to peroxide value, and ships with national-standard programs for both determinations already installed. A high-precision burette and automatic endpoint recognition make one-click testing possible, while a general titration mode remains available for other potentiometric titrations. The instrument is intended for food enterprises, quality inspection agencies and research institutes that evaluate the oxidative stability of oils and fats.
The instrument follows the second methods of the applicable national food safety standards: GB 5009.229-2025 for acid value (cold-solvent automatic potentiometric titration) and GB 5009.227-2023 for peroxide value (potentiometric titration). The automatic potentiometric titrator is also covered by the verification regulation JJG 814-2015.

Applications
The instrument is used to monitor acid value or peroxide value in the following sample groups.
- Edible oils and fats: animal and vegetable oils, hydrogenated oils, shortening, margarine, vegetable fat cream and powdered oils.
- Oil-containing foods: fried, puffed and baked processed foods, nuts and seasoning sauces.
- Other oil and fat products: oil-containing raw materials and finished products that require acid value or peroxide value monitoring.
Acid value is determined by cold-solvent automatic potentiometric titration: the oil is dissolved in isopropanol and anhydrous ether (1:1), free fatty acids are neutralised with potassium hydroxide standard solution, and the instrument monitors the pH jump through a non-aqueous phase pH electrode to determine the endpoint and calculate the acid value. Peroxide value is determined by potentiometric titration: the oil is dissolved in isooctane and glacial acetic acid (2:3), peroxides react with potassium iodide to form iodine, and the solution is titrated with sodium thiosulfate standard solution, with the endpoint determined from the potential jump.
